Raspberry Dessert Cake Recipe

Ingredients
  • icing sugar, for dusting .
  • 3 oz golden caster sugar (85g) .
  • 1 tsp ground cinnamon .
  • 8 oz butter, plus extra for greasing (225 g) .
  • 6 oz fresh raspberries (175g) .
  • 9 oz chocolate, broken into pieces (250g) .
  • 1 tbsp strong dark coffee .
  • 5 eggs .
  • 3 oz plain flour (85g)

Directions
  • Step #1 Preheat the oven to 325°F/160°C/Gas Mark 3.
  • Step #2 Grease a 9-inch/23-cm cake tin with butter & line the base with baking paper.
  • Step #3 Place the chocolate, butter & coffee in a small heatproof bowl & set over a saucepan of carefully simmering water until melted.
  • Step #4 Stir, then remove this from the heat & cool slightly.
  • Step #5 Place the eggs & sugar in a separate bowl & beat together until thick & pale.
  • Step #6 Gently fold in the chocolate mixture.
  • Step #7 Sift the flour & ground cinnamon into a separate bowl, then fold into the chocolate mixture.
  • Step #8 Pour into the prepared tin & sprinkle the raspberries evenly over the top.
  • Step #9 Bake in the hot oven for 35-45 mins, or until the cake is well risen & springy to the touch.
  • Step #10 Leave to cool in the tin for 15 mins before turning out on to a large serving plate.
  • Step #11 Dust with icing sugar before serving with fresh raspberries & cream.
