Walnut Glory Cake Recipe

Ingredients
  • 9 eggs, separated .
  • 2 tsps vanilla extract .
  • 2 c confectioners' sugar .
  • 3/4 c all-purpose flour .
  • 1 tsp salt .
  • 2 c walnuts, finely sliced .
  • 2-3 tbsps milk .
  • 2 tsps ground cinnamon .
  • 1 1/2 c sugar, divided

Directions
  • Step #1 In a mixing bowl, beat egg yolks until slightly thickened.
  • Step #2 Gradually add 3/4 c sugar, beating until thick & lemon colored.
  • Step #3 Beat in vanilla.
  • Step #4 Combine the flour, cinnamon & salt; add to batter & beat until smooth.
  • Step #5 In another mixing bowl, beat egg whites on medium speed until soft peaks form.
  • Step #6 Add the remaining sugar, 1 Tablespoon at a time, beating on high until stiff peaks form.
  • Step #7 Fold a fourth of the egg whites into batter; fold in remaining egg whites.
  • Step #8 Fold in walnuts.
  • Step #9 Spoon into an ungreased 10-inch tube pan (pan will be full).
  • Step #10 Bake at 350°F for 45-50 mins or until cake springs back when lightly touched.
  • Step #11 Immediately invert pan; cool completely.
  • Step #12 Run a knife around side of cake & remove this from pan.
  • Step #13 In a small bowl, mix confectioners’ sugar & enough milk to achieve drizzling consistency; drizzle over cake.
  • Step #14 Yield: 10-12 servings.
