Step #4 Activate yeast in the warm water in a measuring c that has room for the expansion of the yeast.
Step #5 Make sure it is active & bubbly.
Step #6 In a large bowl, mix 4 c of the flour, 1/2 c sugar, & salt.
Step #7 Add yeast & shortening.
Step #8 Lightly beat eggs & add them with the last c of flour.
Step #9 Mix thoroughly.
Step #10 Spray with non-stick cooking spray & cover bowl with plastic wrap.
Step #11 Let rise in a warm place until doubled in bulk.
Step #12 Melt 1 c of butter for filling.
Step #13 Combine sugar, butter, & orange rind.
Step #14 Melt the other 1/2 c butter.
Step #15 You will need a 15" x 20" work surface.
Step #16 Punch down dough & cut in into 4 evenly sized portions.
Step #17 Sift 1/4 c flour evenly over work surface & roll 1/4 of the dough into a 15" x 20" rectangle.
Step #18 Spread a fourth of the filling over the dough & form into a jelly roll starting with the 20" side.
Step #19 Repeat this procedure for the remaining 3 portions of dough.
Step #20 Cut each roll of dough into 16 slices.
Step #21 Place one slice in middle of greased pan, surround with 5 slices & surround those with the remaining 10 slices.
Step #22 Brush with the melted butter, cover loosely with plastic wrap & let rise, when the rolls are almost touching the plastic wrap, remove & allow to continue to rise until doubled in bulk.
Step #23 Bake rolls in a 375°F oven until lightly browned (15-18 mins).
