Mousse De Tomates Recipe

Ingredients
  • For serving .
  • 3 hard-boiled eggs, cut in half .
  • 1 garlic clove, minced .
  • 2 1/2 lbs ripe tomatoes, peeled, seeded (reserve the juice by squeezing out the seeds over a colander that has been set in another bowl to ca) .
  • 1 (1 oz) envelope unflavored gelatin .
  • 1 1/2 tsps thyme leaves .
  • 3/4 c heavy cream .
  • salt & freshly ground black pepper .
  • 1 tbsp vegetable oil .
  • 1 tbsp sliced fresh basil .
  • 1 tsp tomato paste .
  • baguette, sliced

Directions
  • Step #1 Lightly oil a 4-5 c ring mold.
  • Step #2 Heat oil over med-heat/flame; add garlic & sauté 30 seconds.
  • Step #3 Add tomatoes, salt & pepper, cook 20 mins, bay leaf, thyme, stirring often.
  • Step #4 Discard bay leaf & stir in the the basil & the tomato paste.
  • Step #5 Put 1 c of the mixture in a medium bowl & the rest of the mixture In a large-ishr mixing bowl.
  • Step #6 Pour 1/3 c of the tomato juice into a small heatproof bowl & sprinkle the gelatin over it.
  • Step #7 Allow to soften 5 mins.
  • Step #8 After 5 mins, set it in a saucepan of hot water & stir about 5 mins to dissolve.
  • Step #9 Stir 2 tbsps of the gelatin into the 1 c of tomatoes (in medium bowl).
  • Step #10 Combine thoroughly, taste & season highly.
  • Step #11 Stir remaining the gelatin into second bowl tomato & mix thoroughly.
  • Step #12 Refrigerate the tomato mixture that is in the medium bowl 5 mins.
  • Step #13 After 5 mins, spoon this mixture into the oiled ring mold.
  • Step #14 Arrange the egg halves, cut side up, on top of the tomatoes at regular intervals.
  • Step #15 Chill mold 10 mins.
  • Step #16 Whip cream in a chilled bowl with chilled beaters until soft peaks form.
  • Step #17 Fold into remaining tomato mixture.
  • Step #18 Taste for seasoning, overseason slightly.
  • Step #19 Carefully spoon it into mold, without moving the eggs.
  • Step #20 Smooth with a rubber spatula.
  • Step #21 Refrigerate at least 2 hrs.
  • Step #22 To unmold: run a thin bladed flexible knife around the edge, carefully pushing the mixture from the edge to let in air.
  • Step #23 Dip in warm water, nearly to the top, for 10 seconds.
  • Step #24 Dry mold.
  • Step #25 Set round platter on top & flip quickly to unmold.
  • Step #26 If it doesn't work the first time, repeat procedure.
  • Step #27 To serve: Cut into slices & serve this with the baguette slices.
