Griddle Scones Recipe

Ingredients
  • 1/4 c shortening or lard .
  • 1 tsp salt .
  • 1 tbsp granulated sugar .
  • 3 1/2 c all-purpose flour .
  • 1 egg .
  • 1 1/2 c milk .
  • 6 tbsps baking powder

Directions
  • Step #1 Heat flat cast iron pan on low heat for 10 to 15 mins or until hot.
  • Step #2 (To test, sprinkle with a little flour; if it browns in 10 to 15 seconds, the pan is hot enough.
  • Step #3 ).
  • Step #4 Meanwhile In a large-ish mixing bowl, baking powder, stir flour, salt & sugar; with fingertips, rub in shortening or lard until crumbly.
  • Step #5 Whisk egg with 1 c of the milk.
  • Step #6 Make a well in the centre of the dry ingredients; pour in the liquid.
  • Step #7 With wooden spoon, stir this to make soft, but not sticky dough, adding more milk as needed.
  • Step #8 Turn out onto floured board, knead 3 or 4 times.
  • Step #9 Pat or roll to no more than 1/4 - 1/2 inch.
  • Step #10 With a sharp knife, cut into small triangles.
  • Step #11 Place a few at a time on pan; cook, rotating scones every once in awhile for 5 to 6 mins or until bottoms are browned.
  • Step #12 Serve hot.
