2 tbsps butter (optional) or margarine, softened (optional) .
1/2 tsp salt .
1 chipotle chile, seeds removed (to 2) .
1 tsp paprika .
2 large white potatoes, peeled & sliced .
1/2 c whole milk, hot or soy milk .
2 tbsps sliced fresh parsley .
2 garlic cloves, minced
Directions
Step #1 In a medium saucepan, bring about 2 quarts of water to a boil.
Step #2 Place the potatoes in boiling water & cook, over med-heat/flame, stirring every once in awhile, until the potatoes are easily pierced with a fork, about 20 mins.
Step #3 Drain the potatoes in a colander.
Step #4 To a mixer or food processor/blender fitted with a steel blade, add the chipotle peppers & garlic & process until minced, about 5 seconds.
Step #5 Add the potatoes, & process until the mixture is smooth, & salt, milk, parsley, if desired, paprika, butter, about 10 seconds.
Step #6 Stop to scrape the sides at least once (leave a few lumps for a "homestyle" texture).
Step #7 Transfer the potatoes to a bowl & serve as soon as possible.
