Cassada Cake Recipe

Ingredients
  • Filling 1 .
  • 1 yellow cake or white cake (half sheet) .
  • 3/4 c granulated sugar .
  • 1 pint heavy whipping cream .
  • 2 tbsps flour .
  • 1 tsp vanilla .
  • 1 tsp vanilla .
  • 1/4 tsp salt .
  • 13 1/2 oz strawberry glaze .
  • 2 c milk .
  • Icing .
  • 16 oz strawberries (fresh or frozen, sliced) .
  • 1 c powdered sugar .
  • Filling 2 .
  • 3 egg yolks (beaten)

Directions
  • Step #1 Make custard filling by placing granulated sugar, flour & salt in medium sauce pan.
  • Step #2 Add milk & cook over med-heat/flame till thick & bubbly (be careful not to scortch).
  • Step #3 Temper egg yolks by adding some of the hot mixture to the beaten egg yolks & then returning the egg yolk mixture to the hot mixture whisking till mixed.
  • Step #4 Cook mixture another five mins.
  • Step #5 Remove from heat, add vanilla & put in the fridge mixture till completely cool.
  • Step #6 Stir together the sliced strawberries & strawberry glaze, keep put in the fridged till ready to use.
  • Step #7 Cut the half sheet cake in half to make two-quarter sheet cake layers approximately 1" thick.
  • Step #8 Best to freeze these cake layers before working with the filling & frosting to prevent them from breaking apart.
  • Step #9 Place bottom layer of cake on platter or cake tray.
  • Step #10 Stir the cooled custard & spread on the bottom layer of cake making sure to leave about half inch from outside all the away around (when layers are put together the filling will spread out to the ends & if filling is spread all the way to outside it will ooze out).
  • Step #11 Spread the strawberry glaze filling on top of the custard filling.
  • Step #12 Place the other cake layer on top of the fillings.
  • Step #13 Keep put in the fridged till ready to ice the cake.
  • Step #14 For icing, beat the whip cream until frothy.
  • Step #15 Add the powder sugar & vanilla slowly & beat until frosting consistency.
  • Step #16 Ice the cake to your liking & keep cake put in the fridged.
