Fiery Salsa Recipe

Ingredients
  • 2 tsps adobo sauce (from canned chipotle peppers)
  • 2 tbsps lime juice
  • 1/2 jalapeño pepper, seeded & minced
  • 2 large onions, thinly sliced
  • 1/4 tsp salt
  • 2 tbsps vegetable oil
  • 1/2 c frozen whole kernel corn
  • 1 tsp sliced canned chipotle peppers in adobo sauce
  • 4 garlic cloves, minced
  • 1/4 c sliced fresh cilantro
  • 1 (28-oz) can sliced tomatoes, undrained

Directions
  • Step #1 Saute onion & garlic in hot oil In a large-ish saucepan over medium-high heat 5 mins or until tender.
  • Step #2 Add tomatoes & next 3 ingredients.
  • Step #3 Bring to a boil.
  • Step #4 Reduce heat to medium-low; cook, covered, 10 mins, stirring every once in awhile.
  • Step #5 Process 1 c tomato mixture in mixer until smooth, stopping to scrape down sides; return to saucepan.
  • Step #6 Stir in corn & salt; cook 3 mins or until thoroughly heated.
  • Step #7 Stir in cilantro & lime juice.
  • Step #8 Serve with blue corn chips.
  • Step #9 NOTE: Spice flavor increases when chilled overnight.
