Samosas Recipe

Ingredients
  • 1/2 tsp salt
  • 1 tsp dried crushed red pepper
  • 1 medium onion, sliced
  • 9 egg roll wrappers
  • 2 carrots, sliced
  • 1 (9-oz) jar mango chutney
  • 2 garlic cloves, minced
  •  Vegetable oil
  • 1/2 c dried lentils
  • 1 tsp ground cumin
  • 1 to 2 tsps curry powder
  • 2 to 3 tbsps sliced fresh cilantro

Directions
  • Step #1 Cook lentils according to package directions, adding garlic & next 6 ingredients; drain.
  • Step #2 Stir in cilantro.
  • Step #3 Cut each wrapper into 4 squares; spoon about 1 tsp lentil mixture on half of each square.
  • Step #4 Moisten edges with water, & fold in half diagonally, pressing edges with a fork to seal.
  • Step #5 Pour oil to depth of 1 inch into a large skillet or Dutch oven; heat to 375°.
  • Step #6 Fry, 30 seconds or until golden, turning once, 3 at a time, & drain on paper towels.
  • Step #7 Serve as soon as possible with mango chutney.
