Curried Beef Samosas With Mango Pap
Indian Samosas Or Potato And Peas F
Ingredients
1/2 tsp salt
1 tsp dried crushed red pepper
1 medium onion, sliced
9 egg roll wrappers
2 carrots, sliced
1 (9-oz) jar mango chutney
2 garlic cloves, minced
Vegetable oil
1/2 c dried lentils
1 tsp ground cumin
1 to 2 tsps curry powder
2 to 3 tbsps sliced fresh cilantro
Directions
Step #1 Cook lentils according to package directions, adding garlic & next 6 ingredients; drain.
Step #2 Stir in cilantro.
Step #3 Cut each wrapper into 4 squares; spoon about 1 tsp lentil mixture on half of each square.
Step #4 Moisten edges with water, & fold in half diagonally, pressing edges with a fork to seal.
Step #5 Pour oil to depth of 1 inch into a large skillet or Dutch oven; heat to 375°.
Step #6 Fry, 30 seconds or until golden, turning once, 3 at a time, & drain on paper towels.
Step #7 Serve as soon as possible with mango chutney.
