Chile Cornsticks Recipe

Ingredients
  • 1/4 tsp salt
  • 1 1/2 tsps vegetable oil
  •  Vegetable cooking spray
  • 2 tsps baking powder
  • 3/4 c yellow cornmeal
  • 1 1/2 tbsps sugar
  • 3/4 c all-purpose flour
  • 1/3 c seeded, sliced fresh Anaheim chile
  • 1 clove garlic, minced
  • 1/2 c sliced red bell pepper
  • 1 egg, lightly beaten
  • 1/4 tsp baking soda
  • 1/4 c sliced onion
  • 3/4 c corn cut from cob (about 1 1/2 ears)
  • 1 c nonfat buttermilk

Directions
  • Step #1 Heat oil in a medium skillet over med-heat/flame.
  • Step #2 Add bell pepper & next 3 ingredients; sauté 5 mins.
  • Step #3 Set aside.
  • Step #4 Combine flour & next 5 ingredients in a medium bowl; stir well.
  • Step #5 Add bell pepper mixture & corn; stir well.
  • Step #6 Make a well in center of mixture.
  • Step #7 Combine buttermilk & egg; stir well.
  • Step #8 Add to dry ingredients, stirring just until dry ingredients are moistened.
  • Step #9 Heavily coat cast-iron cornstick pans with cooking spray, & place this in a 400F degrees oven for 10 mins.
  • Step #10 Spoon batter evenly into pans.
  • Step #11 Bake at 400F degrees for 20 mins or until lightly browned.
  • Step #12 Remove cornsticks from pans as soon as possible, & serve warm.
