Hummus Spread Recipe

Ingredients
  • 1/4 c fresh parsley leaves
  • 1/4 tsp grated lemon rind
  • 2 tbsps tahini (sesame-seed paste)
  • 1/8 tsp salt
  • 1 (15-oz) can chickpeas (garbanzo beans), rinsed & drained
  • 1 garlic clove
  • 1 tbsp fresh lemon juice
  • 1/2 c 1% low-fat cottage cheese
  • 1/2 tsp ground coriander

Directions
  • Step #1 Place all ingredients in a food processor/blender; process until smooth, scraping sides of processor bowl once.
  • Step #2 Store in an airtight container in refrigerator.
  • Step #3 Serve with pita triangles or fresh vegetables.
