Empanadas Recipe

Ingredients
  • 2 tbsps olive oil
  • 1 8-oz package shredded Cheddar
  • 1 1-pint container fresh salsa
  • 1 16-oz can refried beans
  •  Flour for the work surface
  •  Sour cream (optional)
  • 1 package put in the fridged pizza dough (about 1 lb)

Directions
  • Step #1 Heat oven to 400° F.
  • Step #2 Spread 1 tsp of the oil on a baking sheet.
  • Step #3 Divide the dough into 6 equal portions.
  • Step #4 Roll each into an 8-inch round on a lightly floured surface.
  • Step #5 On half of each round, spread some of the beans, then top this with 1 1/2 tbsps of the salsa & 2 tbsps of the cheese.
  • Step #6 Fold over the other half of each round, covering the filling, & press the curved edge with your thumb to seal.
  • Step #7 Lightly brush the tops of the empanadas with the remaining oil, then transfer to the baking sheet.
  • Step #8 Bake for 12 to 15 mins or until golden.
  • Step #9 Serve with a dollop of sour cream, if desired.
