1 large sweet onion, cut into 1/2-inch-thick slices
1 tbsp lime juice
1 red bell pepper, halved
1/4 c sliced fresh cilantro
3 ears fresh corn
2 garlic cloves, minced
Garnish: fresh cilantro sprig
1/2 tsp salt
Directions
Step #1 Grill first 3 ingredients, over medium-high heat (350° to 400°) 8 to 10 mins or until tender, covered with grill lid, turning every once in awhile.
Step #2 Cut corn kernels from cobs.
Step #3 Coarsely chop onion & red bell pepper halves.
Step #4 Combine grilled vegetables, tomato, & next 7 ingredients In a large-ish bowl; cover & chill 2 hrs or up to 2 days.
Step #5 Serve with chips, fish, grilled chicken, or beef.
