Grilled Corn Salsa Recipe

Ingredients
  • 1/4 tsp ground cumin
  • 2 jalapeño peppers, seeded & minced
  • 2 large tomatoes, seeded & sliced
  • 1 tbsp olive oil
  • 1 large sweet onion, cut into 1/2-inch-thick slices
  • 1 tbsp lime juice
  • 1 red bell pepper, halved
  • 1/4 c sliced fresh cilantro
  • 3 ears fresh corn
  • 2 garlic cloves, minced
  •  Garnish: fresh cilantro sprig
  • 1/2 tsp salt

Directions
  • Step #1 Grill first 3 ingredients, over medium-high heat (350° to 400°) 8 to 10 mins or until tender, covered with grill lid, turning every once in awhile.
  • Step #2 Cut corn kernels from cobs.
  • Step #3 Coarsely chop onion & red bell pepper halves.
  • Step #4 Combine grilled vegetables, tomato, & next 7 ingredients In a large-ish bowl; cover & chill 2 hrs or up to 2 days.
  • Step #5 Serve with chips, fish, grilled chicken, or beef.
  • Step #6 Garnish, if desired.
