Corned Beef And Cabbagei Recipe

Ingredients
  • 1 (5 1/2 lb) corned beef brisket
  • 1 large orange, sliced in rounds
  • 6 tbsps margarine, divided
  • 1/4 c cold water
  • 1 large head cabbage, cored & sliced
  • 1/2 c cold water
  • 1 large onion, sliced
  • 2 stalks celery, sliced
  • 2 tbsps pickling spice
  • 1 c Golden Delicious apples, cored & quartered with peel

Directions
  • Step #1 Preheat the oven to 300F degrees F (150 degrees C).
  • Step #2 Line a 9x13 inch roasting pan with aluminum foil, leaving enough extra extending over the sides to cover & seal in the roast.
  • Step #3 Rinse the brisket, & pat dry.
  • Step #4 Rub with pickling spice, & place this in the prepared roasting pan.
  • Step #5 Arrange celery, orange & onion slices on & around the roast.
  • Step #6 Pour in 1/2 c of water, & wrap aluminum foil up over the roast tightly, making sure the ends are sealed.
  • Step #7 Bake for about 4 hrs in the preheated oven, or until meat is tender.
  • Step #8 About 45 mins before the roasts time is up, heat 3 tbsps of margarine & 1/4 c of water in a large pot.
  • Step #9 Add cabbage & apples, cover, & let simmer over low heat/flame for about 30 mins.
  • Step #10 Occasionally shake the pot so that nothing sticks to the bottom.
  • Step #11 Serve with remaining margarine & sliced corned beef.
