Bacon Deviled Eggs Recipe

Ingredients
  • 1 tsp prepared mustard
  • 8 hard-cooked large eggs
  • 2 tbsps thinly sliced green onions
  •  Salt & pepper
  • 3 slices bacon (3 oz.)
  • 1/3 c mayonnaise

Directions
  • Step #1 In an 8- to 10-inch frying pan over medium-high heat, cook bacon, turning slices as needed, until browned on both sides & crisp.
  • Step #2 Transfer to paper towels to drain.
  • Step #3 When cool enough to handle, crumble bacon.
  • Step #4 Cut each egg in half lengthwise; carefully scoop out yolks & place this in a bowl.
  • Step #5 Mash yolks with a fork, green onions, then stir in the mayonnaise, mustard, & crumbled bacon until well mixed.
  • Step #6 Add salt & pepper to taste.
  • Step #7 Spoon or pipe about 1 tbsp yolk mixture into the hollow of each egg-white half.
  • Step #8 Serve as soon as possible or cover & chill up to 4 hrs.
