Double-stuffed Eggs Recipe

Ingredients
  • 1/2 c instant potato flakes
  •  Garnish: fresh dill sprigs
  • 1/4 tsp salt
  • 3/4 c light mayonnaise
  • 1 tbsp Dijon mustard
  • 1 dozen hard-cooked eggs, peeled
  • 1/4 tsp pepper

Directions
  • Step #1 Cut eggs in half lengthwise.
  • Step #2 Remove yolks.
  • Step #3 Process yolks, & next 4 ingredients in a food processor/blender until smooth, mayonnaise, stopping to scrape down sides.
  • Step #4 Spoon filling into egg whites.
  • Step #5 Cover up & chill up to 8 hrs.
  • Step #6 Garnish, if desired.
  • Step #7 Bacon-Stuffed Eggs: Stir 2/3 c (8 slices) crumbled cooked bacon, 3 tbsps pickle relish, & 1/4 c sliced fresh chives into egg mixture.
  • Step #8 Proceed as directed.
  • Step #9 Shrimp-Stuffed Eggs: Stir 3/4 lb shrimp, minced, cooked & sliced; 2 tbsps prepared horseradish; & 6 green onions, into egg mixture.
  • Step #10 Proceed as directed.
