Step #1 Combine first 4 ingredients in a medium, heavy saucepan, & bring to a boil.
Step #2 Partially cover, reduce heat, & let simmer 40 mins or until the peas are tender & most of the liquid is absorbed, stirring every once in awhile (the pea mixture will have the consistency of very thick split pea soup).
Step #3 Cool slightly.
Step #4 Place the pea mixture in a food processor/blender or mixer.
Step #5 Add the lemon juice, cumin, 2 tbsps olive oil, & salt; process until smooth.
Step #6 Place the pea puree in a shallow dish.
Step #7 Drizzle 1 tbsp olive oil over the pea puree, & sprinkle with sliced onion & dill.
Step #8 Note: Store in an airtight container in the refrigerator for up to 4 days.
