Spiced Date-walnut Snacks Recipe

Ingredients
  • 2 tbsps fresh orange juice
  • 1/2 tsp ground cinnamon
  • 2 c Medjool dates, pitted & sliced
  • 1 tsp grated orange rind
  • 3/4 c walnut halves
  • 1/2 tsp ground ginger

Directions
  • Step #1 Preheat oven to 350°.
  • Step #2 Combine the first 3 ingredients in a medium bowl, stirring with a whisk.
  • Step #3 Add walnuts; toss to coat.
  • Step #4 Arrange walnuts in a single layer on a baking sheet.
  • Step #5 Bake at 350° for 8 mins or until toasted.
  • Step #6 Combine dates & orange rind.
  • Step #7 Line a 9 x 5-inch loaf pan with plastic wrap, allowing plastic wrap to extend 2 inches over edge of pan.
  • Step #8 Firmly press one-third of date mixture into bottom of pan; top this with half of walnuts.
  • Step #9 Repeat layers once, ending with dates.
  • Step #10 Fold overhanging plastic wrap over the top.
  • Step #11 Place a heavy weight on plastic wrap, & let this stand overnight.
  • Step #12 Remove weight; invert loaf onto a serving plate.
  • Step #13 Discard plastic wrap.
  • Step #14 Cut into squares.
