Tomatillo Salsa Recipe

Ingredients
  • 1/2 medium sweet white onion
  • 1 lb (about 16) tomatillos, husked, washed, & quartered
  • 2 garlic cloves, peeled
  • 1 1/2 tbsps fresh lime juice
  • 1 jalapeno pepper, seeded & sliced
  • 2 tbsps sliced fresh cilantro

Directions
  • Step #1 In a food processor/blender, pulse the garlic until sliced.
  • Step #2 Add the tomatillos, jalapeno, onion, & lime juice & pulse until fairly smooth.
  • Step #3 Stir in the cilantro & season to taste with salt & pepper.
  • Step #4 Store covered in the refrigerator.
  • Step #5 Serve at about room temp.
