Deviled Eggs Recipe

Ingredients
  • 1/3 c plain fat-free yogurt
  • 3 tbsps low-fat mayonnaise
  • 12 large eggs
  • 2 tbsps sliced green onions (optional)
  • 1 to 2 tsps hot pepper sauce
  • 1/8 tsp black pepper
  • 1/8 tsp salt
  • 1/8 tsp paprika
  • 1 tbsp Dijon mustard

Directions
  • Step #1 Place the eggs In a large-ish saucepan.
  • Step #2 Cover up with water to 1 inch above eggs; bring just to a boil.
  • Step #3 Remove from heat; cover & let this stand 15 mins.
  • Step #4 Drain & rinse with cold running water until cool.
  • Step #5 Slice eggs in half lengthwise, & remove yolks.
  • Step #6 Discard 3 yolks.
  • Step #7 Combine yogurt & next 4 ingredients (yogurt through salt) in a medium bowl.
  • Step #8 Add remaining yolks; beat with a mixer at high speed until smooth.
  • Step #9 Spoon about 1 tbsp yolk mixture into each egg white half.
  • Step #10 Cover up & chill 1 hr.
  • Step #11 Sprinkle top with paprika & black pepper.
  • Step #12 Garnish with green onions, if desired.
