Marinated Manchego Recipe

Ingredients
  • 1 lb manchego cheese, rind removed
  • 12 arbequina or niçoise olives
  •  Extra virgin olive oil
  • 1 fresh rosemary sprig
  • 4 to 6 fresh thyme sprigs

Directions
  • Step #1 Cut cheese into 1/4-inch-thick wedges; arrange in a 1-quart jar.
  • Step #2 Add olives.
  • Step #3 Arrange thyme on outside edge of jar; place rosemary in center of jar.
  • Step #4 Fill jar with olive oil; cover.
  • Step #5 Allow to marinate in refrigerator for one week.
