Salsa-bean Dip Recipe

Ingredients
  • 1/4 c mayonnaise
  • 4 green onions, cut into 1 1/2-inch pieces
  • 1/2 tsp salt
  •  Garnish: fresh cilantro sprigs
  • 1/4 c lemon juice
  • 2 (15 1/2-oz) cans cannellini beans, rinsed & drained
  • 1/2 tsp ground cumin
  • 2 garlic cloves
  • 1/2 c salsa

Directions
  • Step #1 Process first 4 ingredients in a food processor/blender until coarsely sliced.
  • Step #2 Add beans, & lemon juice, & process until smooth, mayonnaise, stopping to scrape down sides.
  • Step #3 Spoon into a shallow 9-inch round baking dish.
  • Step #4 Process salsa in food processor/blender until smooth, stopping to scrape down sides.
  • Step #5 Spoon into center of bean mixture.
  • Step #6 Pull the point of a wooden pick through salsa toward edge of dish to create a starburst design.
  • Step #7 Serve chilled or at about room temp with tortilla chips.
  • Step #8 Garnish, if desired.
  • Step #9 Note: We preferred hot salsa.
