8 oz skinned & boned chicken breasts, cut into 1/2-inch pieces
1 tbsp tomato paste
Vegetable cooking spray
36 (3-inch) square won ton wrappers
2 tbsps chicken broth
1/2 tomato, seeded & coarsely sliced
1/2 green bell pepper, minced
2 tbsps raisins
1/2 tsp salt
Directions
Step #1 Cook first 13 ingredients In a large-ish skillet coated with cooking spray over med-heat/flame 5 mins or until chicken is done, stirring often.
Step #2 Process chicken mixture in a food processor/blender until coarsely sliced.
Step #3 (Mixture should be fairly dry.
Step #4 Add 1 tbsp breadcrumbs if mixture is wet.
Step #5 ) Cover up & chill 30 mins.
Step #6 Arrange 1 won ton wrapper on a clean, flat surface.
Step #7 Lightly brush edges of wrapper with water.
Step #8 Place 1 heaping tsp of chicken mixture in center of wrapper.
Step #9 Fold dough over filling, pressing edges with a fork to seal.
Step #10 Repeat with remaining wrappers & chicken mixture.
Step #11 Arrange empanadas on a baking sheet coated with cooking spray.
Step #12 Lightly coat empanadas with cooking spray.
Step #13 Bake at 400° for 12 mins or until golden brown, turning after 6 mins.
