Ingredients
  • 1 medium-size green bell pepper, finely sliced
  • 2 (15.8-oz.) cans black-eyed peas, rinsed & drained
  • 1 to 2 jalapeño peppers, seeded & minced
  •  Tortilla chips
  • 1 small sweet onion, finely sliced
  • 1 c Italian dressing
  • 2 medium tomatoes, finely sliced
  • 2 c frozen whole kernel corn
  • 1/2 c sour cream
  • 1/4 c sliced fresh cilantro
  •  Garnish: cilantro sprig
  • 4 green onions, sliced
  • 1 to 2 garlic cloves, minced

Directions
  • Step #1 Combine first 9 ingredients In a large-ish zip-top plastic freezer bag.
  • Step #2 Seal & chill 24 hrs; drain.
  • Step #3 Spoon mixture into a serving bowl.
  • Step #4 Stir in cilantro, & top this with sour cream.
  • Step #5 Serve with tortilla chips.
  • Step #6 Garnish, if desired.
