Fondue Recipe

Ingredients
  • 1 tbsp lemon juice
  • 1 clove garlic, halved
  • 1 lb Jarlsberg or Emmental, grated (8 c)
  • 1 tsp Dijon mustard
  • 1 lb boiled small red potatoes
  • 1/2 c fruity white wine, such as Gewurztraminer
  • 1 lb sourdough bread, cut into 1-inch cubes
  • 1 lb Italian Fontina, grated (8 c)

Directions
  • Step #1 Rub the inside of a medium saucepan with the garlic clove; discard.
  • Step #2 Add the wine, lemon juice, & mustard & whisk.
  • Step #3 Heat to simmering over med-heat/flame.
  • Step #4 Add the cheese, 1 c at a time, & stir with a wooden spoon until smooth.
  • Step #5 Pour into a fondue pot, or set the saucepan on a trivet.
  • Step #6 Serve as soon as possible with the bread & potatoes.
