Truffled Deviled Eggs Recipe

Ingredients
  • 1/3 c mayonnaise
  •  Extra-virgin olive oil (optional)
  • 12 large eggs
  • 1/4 c freshly grated Parmigiano-Reggiano cheese
  •  Freshly ground pepper, to taste
  • 2 tsps Dijon mustard
  • 2 tsps white truffle oil (optional)
  •  Salt, to taste
  •  Garnishes: fresh chives, grated Parmigiano-Reggiano

Directions
  • Step #1 Place eggs & water to cover in a saucepan; bring to a boil.
  • Step #2 Remove from heat, covered, & let this stand, 10 mins.
  • Step #3 Drain eggs, & rinse with cold water for several mins.
  • Step #4 Peel eggs, & cut in half lengthwise.
  • Step #5 Place 6 egg halves (including whites) & all extra egg yolks in a food processor/blender.
  • Step #6 Add mayonnaise, mustard, & 1/4 c grated cheese; mix well.
  • Step #7 Add salt, pepper, and, if desired, truffle oil.
  • Step #8 If too thick, 1/2 tsp at a time, add olive oil (or more truffle oil if you want a stronger flavor), to desired consistency.
  • Step #9 Place mixture in a pastry bag with a plain or star-shaped tip (or a small zip-top plastic bag with a corner cut out), & pipe mixture into remaining egg halves.
  • Step #10 Garnish, if desired.
