Quick Quesadillas Recipe

Ingredients
  •  Salsa
  • 3 medium plum tomatoes, sliced
  •  Sour cream
  •  Vegetable cooking spray
  • 3/4 c (3 oz) shredded Cheddar cheese
  • 6 (6-inch) flour tortillas
  • 1 (4-oz) can sliced green chiles, undrained
  • 3/4 c (3 oz) shredded Monterey Jack cheese

Directions
  • Step #1 Place 1 flour tortilla in a small lightly greased nonstick skillet.
  • Step #2 Sprinkle top with 2 tbsps each of shredded cheeses.
  • Step #3 Spread with 1 tbsp chiles; sprinkle with 3 tbsps tomatoes.
  • Step #4 Top with 1 tortilla, & coat with cooking spray.
  • Step #5 Cook quesadillas over low heat/flame 2 to 3 mins on each side or until golden.
  • Step #6 Remove from skillet; keep warm.
  • Step #7 Repeat procedure with remaining tortillas, chiles, cheeses, & tomatoes.
  • Step #8 Cut each quesadilla into 6 triangles.
  • Step #9 Serve with sour cream & salsa.
