Tapenade Recipe

Ingredients
  • 1 small garlic clove
  • 1 (6-oz) jar pitted kalamata olives (about 1 1/2 c)
  • 1 tbsp sherry vinegar*
  • 3 tbsps extra virgin olive oil
  • 1 tsp rum (optional)
  • 1/4 tsp freshly ground pepper
  • 1 tbsp drained capers
  • 1 tsp lemon juice

Directions
  • Step #1 Pulse first 6 ingredients and, if desired, rum in a mixer or food processor/blender 3 or 4 times.
  • Step #2 Gradually add olive oil, & pulse 3 or 4 times or until mixture forms a coarse paste, stopping to scrape down sides.
  • Step #3 Serve with fresh raw vegetables & toasted French baguette slices.
  • Step #4 * White wine vinegar may be substituted for sherry vinegar.
