Cherry Pieii Recipe

Ingredients
  • 1 tbsp butter
  • 10 tsps cornstarch
  • 1 pinch salt
  • 1/2 c cold water
  • 1/4 tsp almond extract
  • 2 c pitted sour cherries
  • 2 c all-purpose flour
  • 1 1/4 c white sugar
  • 1 c shortening

Directions
  • Step #1 Cut the shortening into the flour & salt with the whisking blades of a stand mixer until the crumbs are pea sized.
  • Step #2 Mix in cold water.
  • Step #3 Refrigerate until chilled through.
  • Step #4 Roll out dough for a two crust pie.
  • Step #5 Line a 9 inch pie pan with pastry.
  • Step #6 Place the cherries, sugar, & cornstarch in a medium size non-aluminum saucepan.
  • Step #7 Allow the mixture to stand for 10 mins, or until the cherries are moistened with the sugar.
  • Step #8 Bring to a boil over med-heat/flame, stirring constantly.
  • Step #9 Lower the heat; simmer for 1 min, or until the juices thicken & become translucent.
  • Step #10 Remove pan from heat, & stir in the butter & almond extract.
  • Step #11 Pour the filling into the pie shell.
  • Step #12 Cover with top crust.
  • Step #13 Bake in a preheated 375 degree F (190 degree C) oven for 45 to 55 mins, or until the crust is golden brown.
