Shrimp And Bacon Deviled Eggs Recipe

Ingredients
  • 1/4 c fat-free mayonnaise
  • 8 hard-cooked large eggs, shelled
  • 1/8 tsp freshly ground black pepper
  • 1/2 c cooked medium shrimp, peeled & sliced (about 4 oz)
  • 1/4 tsp salt
  • 3 center-cut bacon slices, cooked & crumbled
  • 2 tsps Dijon mustard
  • 1/8 tsp ground red pepper
  • 2 tbsps sliced fresh parsley
  • 1 tbsp sliced fresh chives
  • 1/4 c instant potato flakes

Directions
  • Step #1 Cut eggs in half lengthwise; remove yolks.
  • Step #2 Place 4 yolks in a medium bowl; reserve remaining yolks for another use.
  • Step #3 Add potato flakes & next 6 ingredients (through red pepper) to yolks; stir well.
  • Step #4 Stir in shrimp & parsley.
  • Step #5 Spoon about 1 rounded tbsp shrimp mixture into each egg white half.
  • Step #6 Sprinkle top with bacon.
