Lime Pickles Recipe

Ingredients
  • 6 c white vinegar (5% acidity)
  • 1 c pickling lime
  • 6 c sugar
  • 2 tbsps pickling spice
  • 1 tbsp salt
  • 7 lbs (4-inch-long) cucumbers

Directions
  • Step #1 Cut cucumbers lengthwise into 1/4-inch-thick slices.
  • Step #2 Combine cucumber slices, pickling lime, & water to cover in a nonaluminum stockpot; stir well.
  • Step #3 Cover up & let this stand at about room temp 12 hrs.
  • Step #4 Drain cucumbers; rinse with cold water, & return to stockpot.
  • Step #5 Add fresh cold water to cover, & let this stand 1 hr.
  • Step #6 Repeat procedure 2 times.
  • Step #7 Drain cucumbers, & return to stockpot.
  • Step #8 Combine vinegar & next 3 ingredients in a saucepan; bring to a boil over med-heat/flame, stirring until sugar dissolves.
  • Step #9 Pour vinegar mixture over cucumbers in stockpot; cover & let this stand 6 hrs or overnight.
  • Step #10 Bring cucumbers & vinegar mixture to a boil over med-heat/flame; cover, stirring carefully, & let simmer, reduce heat, 35 mins.
  • Step #11 Pack cucumbers into hot, sterilized jars.
  • Step #12 Pour vinegar mixture over cucumbers, filling to 1/2 inch from top.
  • Step #13 Remove air bubbles; wipe jar rims.
  • Step #14 Cover up at once with metal lids, & screw on bands.
  • Step #15 Process in boiling-water bath 5 mins.
  • Step #16 Refrigerate pickles after opening.
