Shellfish Gumbo Recipe

Ingredients
  • 1 1/2 c sliced seeded peeled tomato
  • 2 garlic cloves, minced
  • 1 1/2 c sliced onion
  • 1 lb medium shrimp, peeled & deveined
  • 2 tbsps vegetable oil
  • 1/3 c sliced smoked ham (2 oz)
  • 8 oz lump crabmeat, shell pieces removed
  • 1/2 tsp hot sauce
  • 1/2 c all-purpose flour
  • 4 c frozen cut okra
  • 1/2 c sliced celery
  • 1 (8-oz) container standard oysters, drained
  • 3 (16-oz) cans fat-free, less-sodium chicken broth

Directions
  • Step #1 Preheat oven to 350°.
  • Step #2 Lightly spoon flour into a dry measuring c; level with a knife.
  • Step #3 Place flour in a 9-inch pie plate; bake this at 350° for 45 mins or until light brown.
  • Step #4 Cool on a wire rack.
  • Step #5 Heat the oil In a large-ish Dutch oven over medium-high heat.
  • Step #6 Stir in 3 tbsps toasted flour, & reserve remaining flour for another use.
  • Step #7 Add sliced onion & celery, & sauté 2 mins.
  • Step #8 Add the okra, ham, sliced tomato, & broth, & bring to a boil.
  • Step #9 Reduce heat, & let simmer 45 mins.
  • Step #10 Stir in minced garlic.
  • Step #11 Bring to a boil, crabmeat, & add the shrimp, & oysters.
  • Step #12 Cook for 2 mins or until the shrimp are done & edges of oysters curl.
  • Step #13 Stir in the hot sauce.
