Fish Chowder Recipe

Ingredients
  • 1/2 tsp salt
  • 3 large potatoes, peeled & cut into 1/2-inch cubes (about 5 c)
  •  Paprika
  • 3 c milk
  • 2 medium onions, sliced
  • 1 (12-oz) can evaporated milk
  • 2 1/2 lbs fresh cod, haddock, or pollock fillets
  • 1 c dry white wine
  • 1/2 lb salt pork, cut into 1/4-inch cubes
  • 4 c water
  • 1/2 c minced fresh parsley
  • 1 tsp freshly ground pepper

Directions
  • Step #1 Cook salt pork in a Dutch oven over med-heat/flame until crisp; remove salt pork, reserving 2 tbsps drippings in pan.
  • Step #2 Set salt pork aside.
  • Step #3 Sauté onion in hot drippings over medium-high heat 5 mins or until tender.
  • Step #4 Add potatoes, 4 c water, & wine; bring to a boil.
  • Step #5 Reduce heat, uncovered, & let simmer, 12 to 15 mins or until potatoes are almost tender.
  • Step #6 Arrange fillets over potatoes; cover & let simmer 10 to 12 mins or until fish flakes with a fork.
  • Step #7 Break fish into chunks.
  • Step #8 Add evaporated milk & next 3 ingredients; cook over med-heat/flame just until thoroughly heated.
  • Step #9 Top each serving with reserved salt pork, parsley, & paprika.
  • Step #10 Serve with breadsticks or crackers.
