Hummus Deviled Eggs Recipe

Ingredients
  • 1/4 tsp salt
  • 2 tbsps olive oil
  • 1/4 tsp freshly ground black pepper, plus more for garnish
  • 1/3 c hummus
  • 6 eggs
  • 1 1/2 tsps prepared (not creamy) horseradish

Directions
  • Step #1 Put eggs in a medium pot & cover with cold water.
  • Step #2 Bring to a boil over high heat.
  • Step #3 Cover up, remove pot from heat, & let sit 14 mins.
  • Step #4 Fill a large bowl with ice water.
  • Step #5 With a slotted spoon, transfer eggs to ice water bath (reserve hot water in pot).
  • Step #6 Cool eggs at least 10 mins, then use a slotted spoon to transfer eggs back to hot water (to loosen shells) for 10 to 20 seconds.
  • Step #7 Pat dry & peel.
  • Step #8 Cut eggs in half lengthwise.
  • Step #9 Scoop out egg yolks & put them in a medium bowl.
  • Step #10 Add hummus, olive oil, pepper, salt, & horseradish.
  • Step #11 Mash mixture together with a fork.
  • Step #12 Spoon filling into egg white halves, dividing evenly.
  • Step #13 Sprinkle top with black pepper.
  • Step #14 Note: Nutritional analysis is per egg half.
