Ingredients
  • 2 c plain low-fat yogurt
  • 1 tbsp white vinegar
  • 1 1/2 tsps sliced fresh dill
  •  Mint sprigs (optional)
  • 1 1/2 c grated cucumber (about 1 large seedless)
  • 2 tsps extravirgin olive oil
  • 1 garlic clove, crushed
  • 1 1/2 tsps sliced fresh mint
  • 2 tbsps water

Directions
  • Step #1 Rub a large bowl with garlic; discard garlic.
  • Step #2 Combine yogurt & the next 5 ingredients (through oil) in bowl.
  • Step #3 Cover up & chill 2 hrs.
  • Step #4 Stir in 2 tbsps water, & serve.
  • Step #5 Garnish with mint sprigs, if desired.
