Spanish Shellfish Recipe

Ingredients
  • 12 medium shrimp (about 1/4 lb), peeled & deveined
  • 1/4 tsp pepper
  • 1/2 c sliced onion
  • 2 garlic cloves, minced
  • 1 tbsp sliced fresh parsley
  • 3/4 c julienne-cut red bell pepper
  •  Vegetable cooking spray
  • 12 small fresh clams (about 10 oz), scrubbed
  • 1/4 tsp salt
  • 1/4 c dry sherry
  • 1/4 c sliced low-sodium 96%-fat-free ham
  • 1/8 tsp saffron threads, crushed
  • 1 tbsp sliced almonds, toasted
  • 12 fresh mussels (about 1/2 lb), scrubbed & debearded
  • 1/3 c canned crushed tomatoes

Directions
  • Step #1 Combine sherry & saffron; set aside.
  • Step #2 Coat a large skillet with cooking spray; add bell pepper, ham, onion, & garlic, & sauté 4 mins.
  • Step #3 Add sherry mixture, salt, tomatoes, almonds, & pepper; bring to a boil.
  • Step #4 Add clams; cover, reduce heat, & let simmer 3 mins.
  • Step #5 Add mussels; cover & let simmer 3 mins.
  • Step #6 Add shrimp; cover & let simmer an extra 5 mins or until shells open.
  • Step #7 Discard any unopened shells.
  • Step #8 Sprinkle top with parsley.
