Garlic-chive Flat Breads Recipe

Ingredients
  • 1/4 c yellow cornmeal, preferably stone ground
  • 1 1/2 tsps active dry yeast
  •  Kosher salt
  • 3 tbsps extra-virgin olive oil, plus more for baking sheets
  • 1/3 c finely sliced garlic chives
  • 1 c all-purpose flour
  • 1/2 c warm water

Directions
  • Step #1 In a small bowl, sprinkle the yeast over the warm water & let this stand until foamy, 5 to 8 mins.
  • Step #2 In a medium bowl, mix the flour with the cornmeal, 1/2 tsp of salt & the chives.
  • Step #3 Add the yeast mixture & the 3 tbsps of olive oil & stir until a firm dough forms.
  • Step #4 Cover up the bowl with plastic wrap & let the dough rise at warm room temperature until doubled in bulk, about 30 mins.
  • Step #5 Preheat the oven to 450°.
  • Step #6 Lightly oil 2 large baking sheets.
  • Step #7 Punch the dough down & divide it in half.
  • Step #8 On a lightly floured surface, roll out 1 piece of dough to a 12-by-10-inch rectangle.
  • Step #9 Cut the rectangle lengthwise into 2-inch-wide strips.
  • Step #10 Transfer the strips to a baking sheet.
  • Step #11 Repeat with the remaining dough.
  • Step #12 Set the strips aside until they puff & start to rise, about 8 mins.
  • Step #13 Sprinkle top lightly with kosher salt.
  • Step #14 Bake for about 8 mins, or until browned around the edges & crisp.
  • Step #15 Transfer the breads to a rack & let them cool completely.
  • Step #16 Make Ahead: The flat breads can be stored in an airtight container overnight.
  • Step #17 Recrisp them in a 350° oven for 3 to 5 mins before serving.
