Ingredients
9 tbsps all-purpose flour
1 tsp baking powder
2 tbsps water
1/2 tsp salt
1 c packed brown sugar
6 tbsps unsweetened cocoa powder
2 egg whites
1 c white sugar
1/4 c confectioners' sugar for dusting
6 egg yolks
4 egg whites
1 tsp vanilla extract
Directions
Step #1 Preheat oven to 350 degrees F (175 degrees C).
Step #2 Line a 10x15 inch jelly roll pan with parchment paper.
Step #3 Stir together the flour, baking powder, cocoa, & salt; set aside.
Step #4 In a large bowl, beat egg yolks until thick & pale yellow.
Step #5 Fold in flour mixture.
Step #6 In a large glass or metal mixing bowl, beat 4 egg whites until foamy.
Step #7 Gradually add white sugar, continuing to beat until stiff peaks form.
Step #8 beat in vanilla.
Step #9 Fold 1/3 of the whites into the batter, then quickly fold in remaining whites until no streaks remain.
Step #10 Pour batter into prepared pan.
Step #11 Bake in preheated oven for 12 to 14 mins, or until cake springs back when lightly tapped.
Step #12 Turn cake out onto a towel dusted with confectioners' sugar, & roll up until cool.
Step #13 To Make Frosting: In a small saucepan, stir this together brown sugar & water.
Step #14 Cook, stirring constantly, until sugar spins a thread when dropped from a spoon.
Step #15 In a large bowl, beat together remaining 2 egg whites until foamy.
Step #16 Slowly pour brown sugar liquid into egg whites while beating.
Step #17 Beat until frosting forms stiff peaks.
Step #18 Unroll cake & apply frosting in an even layer.
Step #19 Roll cake back up & put in the fridge.
