Scrambled Egg Burritos Recipe

Ingredients
  • 1 tsp sliced fresh cilantro
  •  Dash of coarsely ground black pepper
  • 4 tbsps reduced-fat shredded cheddar cheese, divided
  • 2 large eggs, or equivalent egg substitute
  • 2 (8-inch) fat-free flour tortillas, heated
  • 1/2 tsp butter
  • 1 tbsp 1% low-fat milk
  • 1/8 tsp kosher salt
  • 4 tbsps sliced seeded tomato, divided
  •  Cooking spray
  • 2 tbsps bottled chunky salsa, divided

Directions
  • Step #1 Whisk the first 5 ingredients (through pepper) in a medium bowl.
  • Step #2 Coat a medium nonstick skillet with cooking spray, & melt butter over med-heat/flame.
  • Step #3 Add the egg mixture, & stir with a heatproof rubber spatula to scramble.
  • Step #4 Sprinkle top 2 tbsps cheese down the center of one tortilla; top this with half of the scrambled egg, 2 tbsps tomato, & 1 tbsp chunky salsa.
  • Step #5 Roll up burrito-style (fold bottom up & sides to center).
  • Step #6 Repeat with remaining ingredients.
