Spoon Rolls Recipe

Ingredients
  • 3/4 c butter or margarine, melted
  • 1 large egg, lightly beaten
  • 1 (1/4-oz) envelope active dry yeast
  • 4 c self-rising flour
  • 1/4 c sugar
  • 2 c lukewarm water (100° to 110°)

Directions
  • Step #1 Combine yeast & 2 c lukewarm water In a large-ish bowl; let mixture stand 5 mins.
  • Step #2 Stir in flour & remaining ingredients until mixed.
  • Step #3 Spoon into well-greased cast-iron muffin pans, or into well-greased cast-iron drop biscuit pans, filling two-thirds full, filling half full.
  • Step #4 Bake at 400° for 20 mins or until rolls are golden brown.
  • Step #5 Note: Unused batter may be stored in an airtight container in the refrigerator for up to 1 week.
