Breakfast Enchiladas Recipe

Ingredients
  • 10 (8-inch) flour tortillas
  • 6 large eggs
  • 2 c sliced cooked ham (about 3/4 lb.)
  • 1/2 c sliced green onions
  • 1/2 tsp salt
  • 1/4 tsp ground red pepper
  • 2 c half-and-half
  • 2 c (8 oz.) shredded Cheddar cheese, divided

Directions
  • Step #1 Sprinkle top cooked ham & sliced green onions evenly down the center of each tortilla; top each with 2 Tbsp.
  • Step #2 shredded cheese.
  • Step #3 Roll up tortillas, & place, seam sides down, in a lightly greased 13- x 9-in.
  • Step #4 baking dish.
  • Step #5 Whisk together eggs & next 3 ingredients In a large-ish bowl.
  • Step #6 Pour mixture evenly over tortillas.
  • Step #7 Cover up & chill at least 8 hrs.
  • Step #8 Remove from refrigerator, & let this stand 30 mins at about room temp before baking.
  • Step #9 Bake, covered, at 350° for 20 mins; uncover & bake 15 mins.
  • Step #10 Sprinkle top with remaining 3/4 c Cheddar cheese, & bake 3 to 4 more mins or until cheese melts.
  • Step #11 Let stand 10 mins before serving.
