Walnut-zucchini Bread Recipe

Ingredients
  • 2 c sugar
  • 3/4 c sliced walnuts
  • 3 large eggs
  • 3 c flour
  • 2 c grated zucchini
  • 2 tsps cinnamon
  • 1 c vegetable oil
  • 1 tsp baking powder
  • 1/2 tsp vanilla
  • 1 tsp salt
  • 1 tsp baking soda

Directions
  • Step #1 Preheat oven to 350°.
  • Step #2 Grease 2 loaf pans (9 in.
  • Step #3 ).
  • Step #4 In a large bowl, beat eggs until frothy.
  • Step #5 Add sugar, zucchini, oil, & vanilla & stir until well mixed.
  • Step #6 Add flour, baking soda, cinnamon, salt, baking powder, & nuts; stir until just mixd.
  • Step #7 Pour batter into pans.
  • Step #8 Bake until a toothpick inserted in the center of each loaf comes out clean, 50 to 60 mins.
  • Step #9 Cool loaves 10 mins in pans, then turn out onto a rack & cool completely before slicing.
