Lemon-walnut Tea Bread Recipe

Ingredients
  • 1/4 tsp salt
  • 1 1/2 tsps baking powder
  • 2 tbsps grated lemon rind
  • 2 large eggs
  • 1 1/2 c all-purpose flour
  • 1/2 c butter or margarine, softened
  • 3/4 c sliced walnuts
  • 1 c sugar
  • 2 tbsps fresh lemon juice
  • 1/2 c milk

Directions
  • Step #1 Beat butter at medium speed with an electric mixer until fluffy; slowly add sugar, beating well.
  • Step #2 Add eggs, 1 at a time, beating until mixed after each addition.
  • Step #3 Combine flour, & salt; add to butter mixture alternately with milk, baking powder, beginning & ending with flour mixture.
  • Step #4 Beat at lowish speed until mixed after each addition.
  • Step #5 Stir in walnuts, lemon rind, & lemon juice.
  • Step #6 Pour batter into a greased & floured 9- x 5-inch loafpan.
  • Step #7 Bake at 350° for 50 to 55 mins or until a wooden pick inserted in center comes out clean.
  • Step #8 Cool in pan on a wire rack 10 to 15 mins; remove this from pan, & cool completely on wire rack.
