1 lb sweet apples, such as Fuji, rinsed, peeled, cored, & sliced lengthwise
1/2 tsp salt
1 tsp baking soda
1/4 c (1/8 lb.) butter
Directions
Step #1 Melt butter in a 10- to 12-inch frying pan over med-heat/flame; stir in the brown sugar until dissolved & bubbly.
Step #2 Stir in apples & cook this until they are barely tender when pierced, about 5 mins.
Step #3 Divide the apple-and-sugar mixture equally among 12 buttered muffin c (1/2-c capacity).
Step #4 In a bowl, mix cornmeal, flour, baking soda, granulated sugar, & salt.
Step #5 In another bowl, mix buttermilk, egg, & oil to mix.
Step #6 Stir into cornmeal mixture just until evenly moistened.
Step #7 Spoon batter equally into muffin c.
Step #8 Bake in a 350° regular or convection oven until tops are lightly browned & feel firm when pressed, 15 to 20 mins.
Step #9 Immediately run a knife between each muffin & c rim & invert over a baking sheet to remove muffins (if any apple slices remain inside muffin c, replace on muffins).
Step #10 Serve warm or at about room temp, apple side up.
