Florida Grapefruit Biscuits Recipe

Ingredients
  • 6 tbsps cold unsalted butter, cut into small pieces
  • 1 c fresh pink grapefruit juice
  • 1/2 tsp baking soda
  • 1 tbsp sugar, plus more for sprinkling
  •  Milk, for brushing
  • 1 tsp salt
  • 3 c all-purpose flour
  • 1 tsp finely grated pink grapefruit zest
  • 1 tbsp baking powder

Directions
  • Step #1 Preheat the oven to 425°.
  • Step #2 Sift the flour, baking powder, salt & baking soda into a large bowl.
  • Step #3 Using a pastry mixer or 2 knives, cut the butter into the dry ingredients until the mixture resembles coarse meal.
  • Step #4 In a small bowl, rub 1 tbsp of the sugar with the grapefruit zest until the sugar is deep pink color.
  • Step #5 Add the grapefruit juice to the sugar & stir until the sugar is dissolved.
  • Step #6 Pour the grapefruit juice into the mixture in the large bowl & stir just until the biscuit dough comes together.
  • Step #7 Scrape the biscuit dough out onto a lightly floured work surface & knead 2 or 3 times until smooth.
  • Step #8 Roll out the dough to a 1/2-inch-thick square.
  • Step #9 Cut the dough into 2-inch squares & transfer to a large baking sheet.
  • Step #10 Lightly brush the tops of the biscuits with milk & sprinkle with sugar.
  • Step #11 Bake the grapefruit biscuits for 15 mins, or until they have risen & are browned on the bottom.
  • Step #12 Let the biscuits cool slightly before serving.
  • Step #13 Make Ahead: The biscuits can be baked early in the day & stored at about room temp.
  • Step #14 Reheat in a 350° oven before serving.
