Gingerbread Waffles Recipe

Ingredients
  • 1/4 tsp ground cinnamon
  •  Cooking spray
  • 2 large egg yolks
  • 3 tbsps molasses
  • 1/4 tsp salt
  • 2 tsps finely grated peeled fresh ginger
  • 1 (4-oz) container applesauce
  • 1/2 tsp baking soda
  • 3 tbsps minced crystallized ginger
  • 3 tbsps canola oil
  • 2 large egg whites
  • 1 1/2 tsps baking powder
  • 2 c all-purpose flour (about 9 oz)
  • 1 1/2 c fat-free buttermilk

Directions
  • Step #1 Lightly spoon flour into dry measuring c; level with a knife.
  • Step #2 Combine flour, baking powder, salt, baking soda, & cinnamon in a medium bowl; stir with a whisk.
  • Step #3 Combine buttermilk & next 5 ingredients (through applesauce) in a small bowl.
  • Step #4 Add milk mixture to flour mixture, stirring just until mixd.
  • Step #5 Stir in crystallized ginger.
  • Step #6 Beat egg whites with a mixer at high speed until soft peaks form.
  • Step #7 Gently fold egg whites into batter.
  • Step #8 Coat a waffle iron with cooking spray, & preheat.
  • Step #9 Spoon about 1/3 c batter per 4-inch waffle onto hot waffle iron, spreading batter evenly to edges.
  • Step #10 Cook for 5 mins or until steaming stops, & repeat procedure with remaining batter.
