Step #1 Lightly spoon flour into dry measuring c; level with a knife.
Step #2 Combine flour, baking powder, salt, baking soda, & cinnamon in a medium bowl; stir with a whisk.
Step #3 Combine buttermilk & next 5 ingredients (through applesauce) in a small bowl.
Step #4 Add milk mixture to flour mixture, stirring just until mixd.
Step #5 Stir in crystallized ginger.
Step #6 Beat egg whites with a mixer at high speed until soft peaks form.
Step #7 Gently fold egg whites into batter.
Step #8 Coat a waffle iron with cooking spray, & preheat.
Step #9 Spoon about 1/3 c batter per 4-inch waffle onto hot waffle iron, spreading batter evenly to edges.
Step #10 Cook for 5 mins or until steaming stops, & repeat procedure with remaining batter.
