Eggs Hussarde Recipe

Ingredients
  •  Marchands de vin sauce:
  • 1 (14-oz) can low-salt beef broth
  • 12 large eggs
  • 2 1/2 tbsps fresh lemon juice
  • 2/3 c 1% low-fat milk
  • 1 1/2 tbsps cornstarch
  •  Cooking spray
  •  Hollandaise sauce:
  • 12 slices Canadian bacon
  • 6 English muffins, split & toasted
  • 1 large egg yolk
  • 3/4 c Merlot or other dry red wine
  • 2 tsps cornstarch
  • 1 tbsp butter
  • 12 (1/4-inch-thick) slices tomato
  • 2 tbsps butter
  • 1/8 tsp salt
  •  Remaining ingredients:
  • 1/2 tsp dry mustard

Directions
  • Step #1 To prepare Marchands de vin sauce, mix the first 3 ingredients in a saucepan; bring to a boil.
  • Step #2 Reduce heat, & cook this until reduced to 1 c (about 30 mins).
  • Step #3 Remove pan from heat.
  • Step #4 Add 2 tbsps butter; stir until butter melts.
  • Step #5 Set aside; keep warm.
  • Step #6 To prepare Hollandaise sauce, mix 1 1/2 tbsps cornstarch & mustard in a 2-c glass measure.
  • Step #7 Gradually add milk & egg yolk, stirring with a whisk.
  • Step #8 Microwave at high 1 min; stir well.
  • Step #9 Microwave at high an extra 30 seconds or until thick.
  • Step #10 Add lemon juice, butter, & salt; stir with a whisk.
  • Step #11 To prepare remaining ingredients, preheat broiler.
  • Step #12 Place tomato slices on a broiler pan coated with cooking spray, & broil 5 mins or until lightly browned.
  • Step #13 Add water to a large skillet, filling two-thirds full; bring to a boil.
  • Step #14 Reduce heat; simmer.
  • Step #15 Add bacon slices, & cook 1 min.
  • Step #16 Remove the bacon with a slotted spoon.
  • Step #17 Drain bacon on paper towels, & keep warm.
  • Step #18 Break eggs into pan; cook 8 mins.
  • Step #19 Remove eggs from water with a slotted spoon.
  • Step #20 Place 1 slice bacon on muffin half; top this with egg.
  • Step #21 Drizzle with 4 tsps Marchands de vin sauce & 4 tsps Hollandaise sauce, & top this with tomato slice.
  • Step #22 Repeat procedure with remaining muffin halves, eggs, sauces, bacon, & tomato.
