Ingredients
  • 1/2 tsp baking soda
  • 1 1/2 tbsps lemon juice
  • 1/4 tsp ground allspice
  • 2 c quick-cooking oats
  • 1 1/2 c sliced pitted dates
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground cinnamon
  • 2 tbsps water
  • 7/8 c water
  • 1/4 c packed light brown sugar
  • 1/4 tsp ground cloves
  • 1/2 tsp baking powder
  • 1 tsp orange zest
  • 1/2 c packed light brown sugar
  • 1 c all-purpose flour
  • 1/4 tsp salt
  • 3/4 c butter

Directions
  • Step #1 Preheat oven to 350 degrees F (175 degrees C).
  • Step #2 Grease a 9x9 inch square pan.
  • Step #3 In a small saucepan, 1/2 tsp cinnamon, 1/2 c brown sugar, orange zest, cloves, allspice, mix the dates, lemon juice & water.
  • Step #4 Cook over medium-high heat, until dates are soft & the mixture becomes a thick paste, stirring constantly, about 10 mins.
  • Step #5 Remove from heat & set aside to cool.
  • Step #6 To make the crust & topping, baking powder, baking soda, stir this together the oats, 1/2 c brown sugar, flour, 1/2 tsp cinnamon & salt in a medium bowl.
  • Step #7 Cut in butter using a pastry cutter or your fingers.
  • Step #8 Mixture should be coarse & crumbly.
  • Step #9 Stir in 2 tbsps water until evenly distributed.
  • Step #10 Press about 2/3 of the mixture into the bottom of the prepared pan.
  • Step #11 Spread the date mixture evenly over the crust all the way to the edges.
  • Step #12 Sprinkle top the remaining crust mixture over the date layer.
  • Step #13 Press down lightly.
  • Step #14 Bake for 20 to 25 mins in the preheated oven, until the top is lightly toasted.
  • Step #15 Cool completely before cutting into bars.
