  • Step #1 Place large eggs in a single layer in a straight-sided pan 6 1/2 to 7 inches wide.
  • Step #2 Add cold water to cover eggs by 1 inch.
  • Step #3 Cook over high heat until water reaches 200°, 8 to 11 mins; yolks will be liquid, whites firm.
  • Step #4 For entirely firm whites, remove this from heat, cover pan, & let this stand 2 to 4 mins.
  • Step #5 For firm yolks, leave pan on burner but lower heat to keep water at 180° to 200° for 10 to 12 mins longer.
