Stackable Grits Recipe

Ingredients
  • 1 c uncooked quick-cooking grits
  •  Vegetable cooking spray
  • 1/8 tsp ground nutmeg
  • 1 c half-and-half
  • 1 1/2 tsps salt
  • 1/2 c (2 oz) shredded Cheddar cheese
  • 1/2 large Vidalia onion, sliced
  • 1/8 tsp ground red pepper
  • 1 (14 1/2-oz) can chicken broth
  • 2 tbsps olive oil
  • 2 garlic cloves, minced

Directions
  • Step #1 Sauté sliced onion & minced garlic in hot oil in a 3-quart saucepan over medium-high heat until tender.
  • Step #2 Add broth & half-and-half; bring to a boil.
  • Step #3 Gradually stir in the grits & salt.
  • Step #4 Cover up, & let simmer, stirring every once in awhile, reduce heat, 10 mins or until thickened.
  • Step #5 Add cheese, pepper, & nutmeg; stir until cheese melts.
  • Step #6 Pour grits into a lightly greased 11- x 7-inch baking dish; chill 8 hrs.
  • Step #7 Invert grits onto a flat surface; cut into 12 wedges.
  • Step #8 Spray top & bottom of each wedge with cooking spray; arrange wedges on a baking sheet.
  • Step #9 Broil wedges 6 inches from heat 2 mins on each side or until golden.
